Overview

History of HACCP Certification – Food Safety

HACCP was developed in the 1960s in response to the needs of the United States National Aeronautics and Space Administration (NASA) to create safe and nutritious food that could be used during space exploration missions. Since then, HACCP has been recognized worldwide as a food safety management system.

In 1973, the FDA required the application of HACCP in food production and processing to prevent the growth of Clostridium botulinum bacteria, which can cause food poisoning.

In 1994, the International HACCP Alliance was established to support the U.S. meat and poultry industries in implementing HACCP.

HACCP certification includes systematic evaluations of all relevant stages in the processing chain, from initial production through final consumption. It also identifies critical steps that directly affect food safety and quality.

HACCP Certification Process

Step 1: Certification Registration

First, the enterprise registers for certification with the ISSQ Quality Institute. Basic information regarding the company, business sector, production model, and products or services provided must be submitted. Following this, the ISSQ Quality Institute will negotiate and sign a service contract with the enterprise.

Step 2: Preliminary Assessment

Based on the specific HACCP requirements of the enterprise, ISSQ Quality Institute’s expert team conducts an initial assessment of the company's food safety management system in practice.

Step 3: Document Review

At this stage, HACCP documents and records prepared by the organization are reviewed to support the certification assessment process. The duration of the review depends on the size and nature of each enterprise. During this period, the ISSQ Quality Institute will provide awareness training and internal audit activities.

Step 4: Management System Assessment

The audit team (certification body) conducts an on-site assessment of the HACCP implementation status within the organization. The assessment verifies conformity between actual practices and the documented information provided by the enterprise. Recommendations for correcting any identified nonconformities within the system will also be made.

Step 5: Review of Assessment Records

Based on the corrective action requirements issued by the certification body, the ISSQ Quality Institute will verify the implementation status and corrective actions. Subsequently, the certification body will review the complete documentation and management system assessment results once again to determine eligibility for HACCP certification.

Step 6: Issuance of HACCP Certificate

After reviewing the assessment results, if all requirements are satisfactorily met, the certification body will issue the HACCP Certificate to the enterprise.
